“Grilled Cheese Sandwiches”


I found this recipe on a website featuring menu ideas for April Fool’s Day, which went along perfectly with the movie night theme. The recipe looked so simple and delicious, that I had to try it. The hubs is a purest when it comes to pound cake. So much so that that he actually prefers to eat the pound cake straight out of the package, still frozen. I usually don’t buy prepared foods, actually I am a card carrying member of the anti-box guild. However, some times, you just need to make the hubby happy. I could see the beads of sweat on his forehead as I first toasted the pound cake and then put icing on it, but I caught him later that night slathering the icing on his blessed frozen pound cake. Success! These are so fast and so easy to put together and make a quick, fun, and great tasting dessert.

“Grilled Cheese Sandwiches”
Yield: 2 slices of pound cake and about 1-2 Tbsp of frosting = 1 serving

1 pound cake (I used the frozen small Sara Lee loaf)
1/2 cup vanilla buttercream icing
yellow and red food coloring

Directions:

If the pound cake is frozen, defrost on the counter (or if you forget this step like I did, microwave 10 seconds for every serving). Slice the pound cake into 1-2 inch thick slices.

Place the slices in a toaster oven and toast until they are golden brown. This is important. Golden brown. Not burned like mine. In this case, do as I say, not as I do! So to recap – golden brown, not burned. Got it? Good. Moving on…

Now tint the frosting by adding a few drops of yellow and red food coloring. Keep in mind, you can always add, but it’s hard to take away. I started with 1 drop of red and 3 drops of yellow and continued to add more to get a shade that looks like American cheese. The pictures don’t show it very well due to the light, but the color turned out to be a perfect color of processed yellow/orange.

Spread the frosting on one side of one slice of the pound cake. Mound the frosting on and then press down with the other slice to make the “cheese” spill out the sides. This makes it look more authentic. Then, slice it down the middle and serve!!
