Oatmeal Cranberry White Chocolate Macadamia Nut Cookies



These cookies are very important. You can tell that they are important because they have a lot of words in their name. Look at it, it’s 7 names! It is a fact that the more names you have, the more important you are. Seriously, look it up! For example, Fabiola Fernanda María de las Victorias Antonia Adelaida de Mora y Aragón was the Queen of Belgium, that’s very important, Belgium needs a Queen. Margaret Mary Emily Anne Hyra is better known as Meg Ryan, also an important person without which we would not have such important movies as When Harry Met Sally and You’ve Got Mail. And finally, let’s not forget about Tikki Tikki Tembo No Sarimbo Hari Kari Bushkie Perry Pem Do Hai Kai Pom Pom Nikki No Meeno Dom Barako. He was important, but then he fell in the well.

Please, tell me you get the reference…

Now, through inductive logic, we come to the conclusion that these cookies are important. Let me explain to you my reasoning: Premise 1. Long names are important, Premise 2. The cookie has a long name, Conclusion: The cookie is important. This is proven with the 3 above examples, if you require a reference, email me. Just be advised that I will not email you back with references.

This is what happens to me when I am out of school. It has only been 2 days since my last final and instead of sitting on my butt and doing nothing, I am researching important people with long names and applying logical fallacies to cookies. I think that this is a problem. I think that I need to get out more.

Enough about logic and research and school. Let me tell you about these cookies. I have a correction to make. For the readers that have been following this blog for the month that it has been up (thanks Mom and Dad), you may recall this cake. In the post, I may have misled you into thinking that pumpkin with cream cheese was the best flavor combination in all of the culinary world. Well, I would like to set the record straight. While pumpkin and cream cheese should still be considered a relationship made in culinary heaven, after eating these cookies, I believe that cranberry, white chocolate, and macadamia nuts are definitely the best flavor combination in the universe!! You’ll just have to take my word on it. Well actually, you don’t! Here’s the recipe!

Oatmeal Cranberry White Chocolate Macadamia Nut Cookies
Yield: about 4 dozen cookies

1 1/2 cups all purpose flour
1 1/2 cups old fashioned oats
1 teaspoon baking soda
3/4 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
1 cup (packed) golden brown sugar
3/4 cup sugar
2 large eggs
1 tablespoon vanilla extract
1 cup dried cranberries
1 cup white chocolate chips
1 cup coarsely chopped roasted salted macadamia nuts

Directions:

Preheat oven to 350°F.

In a medium bowl, combine flour, oats, baking soda, and salt. Mix well with a whisk.

In another bowl with an electric mixer, beat the butter until fluffy. Add both sugars and beat until well blended. Beat in eggs one at a time and mix well after each addition, then add vanilla and beat until just blended.

Using a wooden spoon, stir in cranberries, white chocolate chips, and nuts.

Drop dough by level tablespoonfuls onto prepared sheets, spacing 1 1/2 inches apart.

Bake cookies until just golden, about 14 minutes for small cookies, depending on your oven. Cool on sheets.
